Để làm mứt chuối trước tiên bạn nên chọn chuối sứ chín thì làm mứt mới ngon, sau đó đem lột sạch vỏ chuối rồi tiến hàn ép hơi dẹp.
Gừng đem cạo sạch vỏ, cắt nhỏ, cho gừng vào máy xay cùng với muối, 50ml nước. Đổ hỗn hợp nước gừng lọc qua rây để lấy nước cốt gừng, thêm 2 muỗng canh đường và khuấy đều cho đường tan hết.
Xếp từng miếng chuối lên trên giấy nến đặt trên khay nướng, tiếp theo dùng cọ phết hỗn hợp nước đường gừng lên khắp miếng chuối vừa ấn dẹt. Cho khay chuối vào sấy ở nhiệt độ 120 độ C, cứ khoảng 30 phút bạn lấy ra rồi lật chuối và phết đều nước đường gừng lên chuối rồi đem vào lò sấy tiếp. Thời gian sấy chuối khoảng 4-5 tiếng là chuối dẻo khô.
