Khổ qua có thể dùng nấu canh, xào, gỏi... Bạn có thể biến tấu một chút với món khổ qua kho chay này. Khi ăn có chút vị đắng, mềm mềm của đậu hũ, thấm đậm gia vị và rất đưa cơm.
Khổ qua rửa sạch, đem cắt thành từng miếng dày khoảng 1cm. Bóc bỏ phần ruột khổ qua. Cho 1 tô nước vào nồi đun sôi. Nước vừa sôi thì cho đậu khuôn vào chần sơ khoảng 1-2 phút. Vớt đậu ra để ráo. Chia đậu hũ trắng ra làm 2-3 phần rồi cho vào miếng vải mùng vắt đậu hũ cho ráo nước. Trộn đều đậu khuôn với cà rốt, nấm mèo, bún tàu, hạt nêm chay và tiêu.
Nhồi hỗn hợp đậu hũ trắng vào từng miếng khổ qua. Đun nóng dầu ăn trong chảo, để lửa vừa rồi cho từng miếng khổ qua vào chiên cho chiên cả hai mặt. Khuấy tan các nguyên liệu còn lại để làm nước sốt rồi cho vào chảo. Đậy nắp chảo và đun với lửa nhỏ khoảng 10 phút cho khổ qua thấm nước sốt.
Bày món ăn ra đĩa, thưởng thức. Một chút đắng, mềm, đậm đà rất đưa cơm.
